It is so easy and tasty. Well to be honest mushroom soup is one of the best soups I’ve ever had. They are rich in calcium, iron, potassium, copper and selenium. This mushroom soup is another great addition to my list of mushroom recipes. I have prepared this easy mushroom soup without the cream, which turned out really delicious. This is a clear soup recipe; I have not used any veg stock in the recipe, but cooked mushrooms in water. If you have vegetable stock, you can use it as well.
I have used button mushrooms; you can use any variety of mushrooms to prepare this wonderful soup.

200 Gms button mushrooms, sliced
4 Spring onion bulbs, sliced
1 Tablespoon chopped garlic
1 Teaspoon light soy sauce
1 Teaspoon crushed peppercorns
1 Teaspoon corn flour
2 Tablespoons chopped spring onion greens
1 Tablespoon oil / butter
2 Cups water
Salt to taste
- Heat oil/ butter in a non-stick wok; add garlic, spring onion blubs and sauté till it changes its color.
- Add in the button mushrooms and toss well. Add 2 cups of water, light soy sauce, salt and crushed peppercorns. Mix and allow it cook for two minutes.
- Make corn flour slurry adding two tbsps. water and add it to the soup to thicken it.
- Add spring onion greens, mix and switch off heat.
Serve hot and enjoy with salad.
