This is extremely easy to prepare which has a flavored broth that has carrots, corn kernels, broccoli and beans going into it.

You can even buy ready made cream style corn, but I make my own cream style corn. Soup is a very common preparation in our houses and especially during winter.

Historically, sweet corn soup or corn soup has been the staple food of Native Americans. Gradually, due to globalization, sweet corn soup landed to Indian cuisine and has been widely accepted since then. Now, this soup lists in all the major hotels and restaurants and is must for most of them.

Vegetable Sweet Corn Soup

Ingredients for sweet corn soup:

1/4 Cup carrot, finely chopped
1/4 Cup beans, finely chopped
1/4 Cup sweet corn kernels, fresh / frozen
2-3 Tablespoons broccoli, finely chopped
1 Inch ginger, finely chopped
1 Tablespoon spring onion greens
1/2 Teaspoon black pepper powder
2 Teaspoons corn flour
2 Cups water
Salt to taste

To prepare sweet corn paste:

1/4 Cup sweet corn kernels, fresh / frozen
1/4 Cup water

Preparation:

  • Finely chop all the vegetables.
  • In a small blender add in the sweet corn kernels and water, blend smooth to form a paste. Keep aside.

Method:

  • Take a large saucepan, to that add water and also add in the chopped ginger, beans, carrot, broccoli and corn kernels.
  • Now, add in the prepared sweet corn paste and mix well.
  • Cover and cook for 5- 10 minutes on medium flame.
  • Mix the corn flour in 4 tbsps. of water and keep aside.
  • Once the veggies are almost cooked add in the corn flour paste and give a quick stir.
  • Add needed salt and black pepper powder.
  • Garnish with spring onion greens and serve hot.
