It’s a vegetable soup, but add the garlic at the end to give it a strong garlicky flavor and to thicken the soup instead of corn flour I used oats kind of innovative idea rite J. This not only just makes the Garlic Vegetable Soup, but also adds more fiber to this soup.

1/4 Cup carrot, finely chopped
1/4 Cup beans, finely chopped
1 Tablespoon onion, finely chopped
1 Tablespoon mushroom, chopped
1 Tablespoon green bell pepper, finely chopped
2-3 Tablespoons broccoli, finely chopped
4-5 Garlic cloves, finely chopped
1 Tablespoon spring onion greens
1/2 Teaspoon black pepper powder
2 Teaspoons rolled oats
2 Cups water
Salt to taste
- Take a large non-stick pan, heat oil and add onion. Sauté on a medium flame until transparent.
- Add in the finely chopped vegetables, sauté for 4-5 minutes. Add 2 cups of water, salt and pepper powder, mix well and cook on a medium flame for 2 minutes, while stirring occasionally.
- Add in the garlic, oats, spring onion greens and cilantro mix well and cook on a medium flame for another 1 minute.
