Masala bread egg toast is a brilliant breakfast or snack recipe; it is almost similar to the french toasts. Here bread is dipped in a masala egg mixture and toasted over a skillet. There are many ways of making this toast. I have added a few tablespoons of vegetables randomly while making this toast; mostly I used these combinations of onion, tomato, green chilies and cilantro. You can add any vegetables in the egg mixture and coat the bread slices with it.
This is one of the quick toasted bread recipes, which can be prepared in jiffy.

4 Slices of bread (preferably white sandwich bread)
1 Small onion or 2-3 shallots, finely chopped
1 Small tomato deseeded, finely chopped
2-3 Green chilies, finely chopped
1 Tablespoon cilantro, finely chopped
Pinch of turmeric powder
Pinch of red chili powder
Pinch of Pepper powder
Oil for shallow frying
Salt to taste
- Whisk eggs, turmeric powder, red chili powder, pepper powder and salt together in a bowl. Add finely chopped onion, tomato, cilantro, green chilies, pepper powder and mix well.
- Cut the corners of the bread slices and cut into triangles.
- Heat a tbsp. of oil in a skillet over medium heat. Dip the bread slice (one at a time) in the egg mixture and let it soak for 6-7 seconds on each side. Drain off excess.
- Place it on the heated skillet and fry both sides on medium heat until golden brown. Repeat the same process for the rest of the bread.
Serve hot with tomato ketch up.
