Chicken Fry – Kerala Style

Chicken fry is very popular in all restaurants especially in thattu kadaa’s and in toddy shops. Chicken fry is truly irresistible. This recipe can be prepared by baking, grilling or deep-frying, but I prefer shallow frying the chicken pieces.

Generally, I use chicken drumsticks for this recipe but you can use any pieces of your choice. This dish is so easy and flavorful; trust me you would definitely love to prepare again and again.

4 Chicken drumsticks
Curry leaves
Oil for shallow frying

To crush:

3-4 Green chilies
1 Inch ginger piece
4-5 Garlic cloves
Mint leaves

For marination:

2 Tablespoons red chili powder
1/2 Teaspoon turmeric powder
1 Teaspoon garam masala powder
1/2 Teaspoon black pepper powder
1 Tablespoon lemon juice
Salt to taste


  • Wash drumsticks thoroughly under running water. Drain off the water completely and wipe them off with kitchen towel.
  • Make 2 to 3 deep incisions into the meat to get marinated well from inside.
  • In a bowl add in the crushed green chili, ginger- garlic, mint, red chili powder, turmeric powder, garam masala powder, black pepper powder, salt and lemon juice. Coat the chicken drumsticks well, cover and marinate in the refrigerator overnight.


  • Heat oil in a non-stick frying pan and add in the curry leaves and chicken drumsticks.
  • On low to medium heat, fry the pieces changing the sides occasionally for about 10-12 minutes per side. Drain onto paper towels.
  • Repeat for left over pieces.
