Chicken Fry / Chicken Varattiyathu Kerala Style

Chicken fry is one the authentic, delicious recipe in Kerala menu. The chicken is stir fried until it becomes completely dry. There are different ways of preparing chicken varattiyathu, which I will be posting it very soon.

This Chicken varattiyathu tastes excellent with Rice or you can also serve it as a Starter.

Chicken Fry / Chicken Varattiyathu Kerala Style

Prep time          : 10 minutes

1/2 Kg chicken
1/2 Cup onion
3-4 Garlic cloves
2 Inch ginger piece
1.5 Tablespoons yogurt
1/2 Teaspoon turmeric powder
1/2 Teaspoon mustard seeds
3 Tablespoons coconut oil
Curry leaves
Salt to taste

Masala to roast and grind:

1 Tablespoon coriander seeds
5-6 Cardamoms
2 Inch cinnamon piece
4-5 Cloves
1 Bay leaf
1/2 Teaspoon peppercorns
1/2 Teaspoon cumin seeds
1/4 Teaspoon fennel seeds
6-7 Dried red chilies


  • Clean and wash the chicken pieces.
  • Dry roast the spices given above and grind it with ginger, garlic, onion and yogurt to a smooth paste.
  • Marinate the chicken with the ground paste and salt. Mix everything together and keep it aside for at least 4 hour.


  • In large skillet heat oil add mustard seeds, when sputters add curry leaves and turmeric powder. Sauté for few seconds.
  • Now, add in the marinated chicken and mix well.
  • Cover it with a lid and cook on low to medium flame, stirring occasionally.
  • It will take minimum 30-40 minutes to cook.
  • Remove it from the flame and serve hot with steamed rice.
