Mulaku chammanthi is one of my favorites and it needs no introduction to keralite. This is a very quick recipe.
Today I am preparing mulaku Chammanthi like how my mom used to prepare. My mouth is already watering while writing this recipe. Mulaku chammanthi is a deadly addictive combo with kappa, just love this.
Prep time : 5 minutes
Cooking time : 5 minutes
Total time : 10 minutes
Servings : 3
Category : Condiment
Cuisine : Kerala, South Indian
7-8 Dried red chilies
2-3 Shallots (small size)
2 Garlic cloves
2 Teaspoons coconut oil
Tamarind – small piece
Salt to taste
- Heat coconut oil in a pan and roast dry red chilies till they turn dark brown in color (Make sure you don’t burn the chilies). Remove from heat and allow it to cool.
- Grind together roasted red chilies, shallots, garlic, tamarind and salt to a coarse paste, without adding water.
- Transfer the ground mixture to a bowl, add in the remaining oil and mix well. Allow it to stand for 5 minutes for the flavor to set in.
Serve with boiled kappa. It also goes well with simple porridge.
