Kale Quinoa Salad With Roasted Zucchini And Asparagus – Healthy Salad Recipe

Ah! I love my salads! This vegan quinoa salad is crispy and tender roasted zucchini and asparagus with toasted sunflower seeds. I generally throw feta cheese into my salads, which makes my salad more delicious and nutritious. It would be a great light dinner, and it’s great for people who are trying to lose weight.

Kale Quinoa Salad With Roasted Zucchini And Asparagus – Healthy Salad Recipe

Ingredients:

1 Cup quinoa
2 Cups finely chopped kale
1/2 Cup zucchini diced
1/2 Cup asparagus cut into ½ inch pieces
1/4 Cup diced red bell pepper
1/4 Cup sliced cherry tomatoes
1/4 Teaspoon black pepper
1.5 Tablespoon sunflower seeds
1 Teaspoon lemon juice
1 Tablespoon feta cheese
1 Teaspoon olive oil
Salt to taste

Preparation:

  • Wash the quinoa and boil with 2 cups of water and salt in a saucepan, over a medium- low heat, cover and cook until the quinoa has absorbed all the water for about 20 minutes. Fluff the quinoa with a fork and set aside to cool.

Method:

  • In a skillet, heat oil and add in the zucchini and asparagus with a little salt, sauté them slightly.
  • Add kale and cook for a minute. Then add half a cup of water and cook with the lid on until the kale wilts.
  • Now, once the water has evaporated, its time to add in the cooked quinoa.
  • Next, add diced red bell pepper and cherry tomatoes. Sprinkle some black pepper and squeeze lemon.
  • Transfer it to a bowl, sprinkle sunflower seeds and feta cheese for dressing.
