Simple Onion Tomato Curry

Today I am sharing a very simple tomato recipe, which can be prepared in no time. When there are no veggies in the kitchen, I prepare this vegan tomato curry along with steamed rice. The curry is little spicy and at the same time lightly tangy. Personally, I prefer it little extra spicy; hence I have added green chilies and red chili powder. But, you can always prepare this curry less spicy.

Simple Onion Tomato Curry

Ingredients: 
1 Cup chopped tomato
1 Medium sized onion
2-3 Garlic cloves
2-3 Slit green chilies
0.5 Teaspoon turmeric powder
1 Teaspoon red chili powder
1 Teaspoon mustard seeds
1 Tablespoon oil
Curry leaves
Cilantro
Salt to taste

Method:

  • Heat oil in a pan, and add mustard seeds. When it crackles put curry leaves.
  • Add green chilies, garlic, onion and salt. Sauté until onions turn translucent.
  • Now, add tomatoes, along with turmeric powder, red chili powder and mix well. Cover it and cook for 5 minutes.
  • Garnish with cilantro and serve hot accompanied with salad and pickle.
