Vegetables Stir-Fry

Vegetable stir fry salad is a healthy mix of vegetables which is very crunchy and colourful. This is also very low in calorie. Stir-fry your favourite veggies and serve for a veggie-rich dinner.
I pulled out all the vegetables from my fridge today to prepare this healthy dish. You can also use many other vegetables to prepare this wonderful dish.

Ingredients:

1 Cup diced potato
1 Cup carrots cut into thin slices
1 Cup green beans cut in approx. 1 inch
0.5 Cup celery
0.5 Cup green peas
2 Inch ginger piece
0.5 Teaspoon mustard seeds
0.5 Teaspoon lemon juice
2 Dried red chilli
1 Tablespoon shredded coconut
1 Tablespoon oil
Salt to taste

Method:

  1. Heat oil in a wok or large skillet over medium to high.
  2. Add mustard seeds. When it splutters add dried red chilies and ginger. Cook for some time.
  3. Add potato, carrot, green peas, celery, and green beans. Toss and continue to cook for another 2 minutes. Cook till translucent.
  4. Now, switch off the flame and put salt, lemon juice and shredded coconut. Mix well and serve.
