Vegetable stir fry salad is a healthy mix of vegetables which is very crunchy and colourful. This is also very low in calorie. Stir-fry your favourite veggies and serve for a veggie-rich dinner.
I pulled out all the vegetables from my fridge today to prepare this healthy dish. You can also use many other vegetables to prepare this wonderful dish.

1 Cup diced potato
1 Cup carrots cut into thin slices
1 Cup green beans cut in approx. 1 inch
0.5 Cup celery
0.5 Cup green peas
2 Inch ginger piece
0.5 Teaspoon mustard seeds
0.5 Teaspoon lemon juice
2 Dried red chilli
1 Tablespoon shredded coconut
1 Tablespoon oil
Salt to taste
- Heat oil in a wok or large skillet over medium to high.
- Add mustard seeds. When it splutters add dried red chilies and ginger. Cook for some time.
- Add potato, carrot, green peas, celery, and green beans. Toss and continue to cook for another 2 minutes. Cook till translucent.
- Now, switch off the flame and put salt, lemon juice and shredded coconut. Mix well and serve.
